The Drunken Gourmet: Spicy Jalapeño Habañero Mango Chicken Sausage Fettuccine Alfredo

Disclaimer: The poster is a professional chef. Please do not try this while intoxicated, as he did. He's probably going to regret this at some point tomorrow.

Ingredients (quantities left to your discretion; The Chef was winging it):

Fettuccine Noodles
Classico Creamy Alfredo Sauce (this is good stuff, at least until The Chef comes up with his own alfredo recipe)
Aidell's Spicy Mango with Jalapeño Chicken Sausage, sliced (I found this at Costco, no idea where else it's available. But it's tasty stuff!)
Sliced white mushrooms
Julienne'd yellow onion
Extra virgin olive oil
Habañero Jack cheese (I found this at Safeway; can't remember the brand)

In one pan, sautee mushrooms, onions, and sausage in olive oil.

In a second pan, heat the alfredo sauce.

Chop up some of that fine habañero jack cheese, and add it to the alfredo sauce. Allow the cheese to melt, stirring it into the sauce.

Add your fettuccine noodles to the sauce, tossing until the noodles are well-coated with sauce.

Drain any excess oil from the sauteed vegetables and sausage, and add to the noodles & sauce. Continue to toss everything together.

Plate the results, and top with shredded Parmesan cheese, or whatever shredded cheese you prefer — I used a blend of mozzarella, Parmesan, asiago, and mild white cheddar.

Wash it down with your beverage of choice. My choice was Redhook ESB (my sixth of the evening), along with some ibuprofen to mitigate tomorrow's regret.

Omigod, this was tasty!

Sounds tasty. For me, that is Bachelor Food(tm) - when the family is out and I am on my own, I whip up something like that - saute chicken, onions and mushrooms, blend with pesto and gemelli pasta or something, cover with crushed red peppers . I then get to eat it while I play guitar in front of the TV while drinking a beer. Bliss.

Gotta remember to take that ibuprophen ahead of time...

Yep, sounds like "wife out of town" food to me, too, but for me that's because of the peppers. I'm the cook in the relationship, but when the wife is away or having dinner with her friends, I'm cracking out the habaneros and fataliis.

I am an actual bachelor I've given some thought to starting a "cooking for the single guy" web site, complete with instructional videos, but just haven't gotten around to it. But geez, that's not healthy, and I've gotten tired of that kind of food in any case. So I've been on a kick lately to come up with stuff that's relatively nutritious and tasty, and can be prepared quickly. So far, that's involved a lot of sauteing and pasta. Since cooking the pasta is the most time-consuming part, I've taken to cooking off the entire package of fettuccine/linguine/whatever at once, cooling it, and then putting single-serving portions into Zip-Loc bags and freezing them. Then I can just thaw a portion and add it to whatever sauce/meat/vegetable combo I've come up with.

It's a "trick" I learned years ago when I was younger and drank a lot more than I do now. Block the headache preemptively, instead of waiting until it already hurts. But make sure it's ibuprofen - I understand that combining Tylenol/acetaminophen with alcohol is hard on the ol' liver.

I can appreciate that. I'm not a professional by any means, but the whole cook for half an hour, eat in ten minutes, clean for half an hour gets old fast.

I tend towards casseroles and stir fries myself (I either cheat on the stir fry and buy already cut ingredients, or I cut them earlier in the day. And I'll cook a whole bunch of rice, separate it into single servings, and freeze them).

Or if I'm really lazy, I'll do a snacky dinner of cheese, berries or other produce, and bread and eat it in front of the TV. But it doesn't take much to fill me up.
